Recipe for smoked corn chicken? (Vietnamese Dish)

I went to a local Vietnamese restaurant last night with some friends, was a little on the pricey side but well worth it, £30 a head not including drinks but all you can eat, they bring out a platter of starters and something called smoked corn chicken (which I'll get back to in a second), then more if you want it, then crispy duck wraps, which I believed was the main course. It wasn't, in fact it was a third starter, then you get a menu and pick a dish to have as main (then have it again and again if you want, or try something different until you explode). It was utterly fabulous.
Anyway, this smoked corn chicken. It was small pieces of chicken (about the same size as small prawns), with a red coating and a salty but spicy taste, it was one of the most amazing dishes I've ever tasted. Been looking for a recipe for it but can't find one, so can the seemingly infinite knowledge of PH help?
