The part that attaches to the manifold is just a flat metal plate that blocks off the large port into the manifold. There may be an o-ring, gasket, or a bead of silicone sealant between the manifold and the plate to make the whole mess airtight. You can probably just pull or scrape off the stuff that sticks out - it looks like it's just old sealant/gasket/o-ring.
The plate makes a convenient place to mount the MAP sensor, but other than supplying a place for two bolts, has nothing to do with the function of the sensor.

Thanks for that, looked like it was part of the sensor. Now after looking at the one on the car I can see it is, as you said.
