Hi, have a 2 kilo duck. What's the best way to cook?

Dig a hole in the garden.
Place hot coals in hole
Put duck in foil.
Put foil rapped duck in the hole.
Fill in hole with soil.
Leave for some time.
Remember where hole was.
Dig up duck.

Personally I would cut the duck in half through the ribs so that you have the legs attached to the back and the crown intact but wings removed (also remove wishbone). Season all meat and then roast legs/ back and wings at 150dc for 1.5 - 2 hrs and then turn oven up to 220dc fry crown for a few mins to crisp skin and then transfer to the oven skin side up for 15 mins let all meat rest and then carve. This gives you fall off the bone leg meat med/rare breast meat and crisp skin. If you just roast it whole you tend to have a compromise on texture.

If you're roasting it in the oven put it on a a wire rack to hold it off the bottom of the tin. Ducks are quite fatty and it'll end up frying the bottom half which will be swimming in grease.

We had duck for Christmas lunch and simply pricked it all over (with a metal skewer or a fork) very thoroughly and then liberally smothered/rubbed in salt.

Roast in oven for about 1 1/2 hours.

That was pretty much it I think and it was lovely smile
