what to do with beef ribs?

I went out with the intention of buying beef skirt and came back with these:







the cuts you see are so i can split it if i want into 4 as its 2.3kg of beef there.

was thinking a slow roast but does anyone else have any ideas?

lick the recipe calls for short ribs, as you've got a whole ribs you can make a big one. smile

Oh and forget the marrow bone or else you'll have to go shopping again.

Wow. I think they are known also as "pale bone", although i might be wrong.

I'd do this, but just be sure to cook a little slower.

For £7 or so a kilo and costing £17 in total last time its worth it... Having a good butcher near by is a god send.

Lucky man! What you have there is one of the finest and most underrated parts of the whole beast. Cook them SLOWLY. If you have a slow cooker, use that, if not, a very low oven and a lidded casserole dish.

Brown them in a very hot pan or cast iron casserole dish, surround with onions, carrots, celery, bay leaves, thyme and a piece of orange peel, then cover with beer/red wine/good stock and let them sit at the barest simmer for five or six hours at least.

Serve with fresh green beans, loads of mashed potatoes (stir in a spoonful of horseradish?) and sprinkle with chopped fresh parsley.

Goo back tomorrow and buy another load!
