valve spring shims help

I have read the cylinder head rebuild section of my AJP manual but must be missing something?
I think I understand that the aim is to calculate and standardise the distance from the spring seat on the cylinderhead to the underside of the valve cap so that valve spring pressure and coil clearance is even.
What the manual does not state is what this distance should be? 50mm? 40mm?.
Does anyone know or am I misunderstanding what I should be doing.
I need to do this as all my valves and seats have been cut to 3 angle profiles.
