I want to make some (white!) chocolate chip biscuits, but like some I got recently, that were more shortbready, crumbly and very very buttery, rather than the more traditional "chewy" cookie.

Anyone got a good recipe that sounds the ticket?

4oz butter
2oz caster sugar
6oz plain flour
  • Heat the oven to 190C / Gas 5.
  • Beat the butter and the sugar together until smooth.
  • Stir in the flour to get a smooth paste.
  • Add in your options of choice - choc chips, etc
  • Turn on to a work surface and gently roll out until the paste is 1cm/½in thick.
  • Cut into rounds or fingers (or use shape cutters) and place onto a baking tray.
  • Bake in the oven for 15-20 minutes, or until pale golden-brown. Set aside to cool on a wire rack.
Lovely - I have the last one on my desk with chocolate chips and it's goooood smile

Note - if you are doing this with a 2 year old, double the amounts as there will be a healthy (!) amount of eating of it while it's being made.
