Ideas for using up smoked salmon

My Mum makes a smoked salmon mousse with the leftovers from Christmas (with smoked salmon and the remainder of the whole baked salmon). Served on toasted, sliced ciabatta with a bit of lemon and dill it makes for a pretty good starter or snack. 
I don't have the recipe for it but I'm sure Google will have something similar.

I had some to use up and did this:-
Boil some new potatoes until tender then drain & slice.
Fry shalotts (or onions) in a little oil then add the potatoes to crisp them up.
Add chunks/slices of smoked salmon and warm them through until they turn deep pink.
Slurp in a good glug of balsamic vinegar and use it to rub any nice crispy bits off the bottom of the pan and make a bit of a sauce.
Serve, I had it as it but would go nicely with a salad or some chunky bread.
