Made it for steak for New Year's Eve. Wife is ill, doesn't eat dinner, put gorgeous bearniase in the fridge. Tonight every attempt to revive it fails - gently heating in warm water, microwave, extra butter. Can it be rescued (for future reference, forget this one)? (Sorry, should say Bearnaise Sauce in the title!)

has it split or scrambled ?

If it's just split - whisk in some cold water, a little at a time, to the warm sauce to resurrect the emulsion. Adding some egg yolks, whisked with a little white wine or vinegar can also work.

If it has scrambled - bin it.

You need to add some Bs, preferably just one at the front, to make your Earnaise sauce complete silly
