If you're driving park at the railway station and walk in. There's a plan of the city just over the road from the station showing a lovely riverside tree lined route into the city. Parking costs just 2E a day.
Avoid eating in the main square - food and drink is the most expensive I've ever found in Europe - 7.50E for a 33ml glass of beer. Last time me and Mrs JS went we took a picnic and a bottle of wine and sat by the river.
The canal trip is well worth the 6.50E or so. Lots of history and architecture in 4 languages. Get onboard early ques get big later in the day.
Otherwise just wander round - there's more than enough quaint little cafes, street entertainers and interesting buildings to see.

Decent chocy shop that's not touristy. Amazing champagne & cognac chocs.
Chocolaterie Spegelaere
Ezelstraat 94
8000 Bruges, Belgium
050 33 60 52
Cracking little pub:

Ask in the choccy shop for a couple of good restaurants that the locals go to. They're very helpful.

I am also going in a few weeks time, one of my favourite restaurants in called Pieter Pourbus. If you type it into a search engine you can have a look at their website and menu etc. Hope that helps.
Also visit the Halve Maan brewery at lunchtime for a snack and a good beer.
Enjoy the trip!

Just do a search on here for Bruges. Many establishments have been suggested, my favourite bar in the world is in Bruges, the Bar Cambrinus.
The beer list is like a phone book.
Oh, and contrary to Colin Farrells' view, Bruges is not a sh*thole. Brussels is a sh*thole.
editted to put the film reference in.

The tour round the Bruges Zot brewery (Halve Maan brewery) is unmissable if you get the same guide we did - even if you / mrs have no interest in beer.
The guy was hilarious, very entertaining, never seen someone so enthusiastic about beer.
Bruges is a bit dead at night (or it was in Feb) - as said food very expensive in restaurants nr the main square.
