The smell in garlic is caused by compounds called thiols / mercaptans, which contain sulphur.
I think the iron in the steel binds to the thiols (via the sulphur atom) and removes it. It is well known that iron and sulphur have an affinity for each other (see Pearsons hard/soft acid bases).
