Fridge prefers to be a freezer....

So my fridge keeps freezing anything I put in it; liquid, lettuce, once a whole ham joint. I am going to rent the place out soon so naturally I don't fancy buying a replacement and have ordered a replacement thermostat after intensive googling led me to believe this is the most likely cause and the cheapest thing to try first. (The seals seal fine).
Its a Homark 02-900290 of unknown age. Anyone know either generally or specifically for this model how difficult it is to replace the thermostat? Do you have to thread the capillary-doodah around the inside-back of the fridge? Does it connect to the back panel or just hang around? Its built-in so am I gong to have a mare?
Any advice / links / instructions anyone has greatly appreciated. I recently replaced the element on the oven which decided to give up as well and was very glad I did not fork out for a new one ....don't want to buy new stuff for rental if possible to avoid.

Nah, its been like it for ages.... I think that the thermostat is faulty as when the fridge is emptier it cannot adjust down the level of cooling to keep the inside at the required temp, to be honest I ordered the thermostat already as its inexpensive, so just looking to understand the difficulties in the job ahead etc...
It does other odd stuff too, created a big slab of ice and then let it half fall off before refreezing it. Looked like some bizarre abstract Ice sculpture in the back fo the fridge.
