I was having a chat with a couple of mates, one of whom is really having some £££-problems and we wondered if you could eat a meal for a quid. I couldn't really come up with anything personally.
The basic rules are:
1. Everything has to be bought from a supermarket
2. Ready meals don't really count (apparently Asda have some quid meals)
3. Portion sizes have to be of a good size (i.e. not for an anorexic)
Other than that - fairly open on foods etc. Any ideas?

Baked potato, with value brand beans or something similar, pasta with tuna etc. I know its not very creative, but would provide most of the basics dietary requirements
When shopping special attention should be paid to special offers and the reduced price section . . . . . . Shopping at Aldi, Liddl etc would also no doubt help eek out a little more from a tight budget

Couscous (61p for 500g figure 50g per serving so 6.1p)
Raisins (64p for 500g, 25g serving being 3.2p)
Blanched Almonds (1.47 for 100g, 36.75 per serving so optional)
Chicken Stock (stock cube about 11p)
Shallot
Garlic Clove
Desert spoon of oil
Chicken pieces
Garden Mint
Will leave you to shoe horn the shallot, garlic, oil and chicken pieces into the budget
Porridge
Some sausages with slices of new potato
Pasta with Passata and some variety of meat
Raisins (64p for 500g, 25g serving being 3.2p)
Blanched Almonds (1.47 for 100g, 36.75 per serving so optional)

Fritatas, tortillas and other egg dishes can easily come in under £1 per large portion as supermarket eggs can be bought for £2.50 for 15 free range, £2 for 18 barn eggs, so that's 17p per egg
for veg get what's on offer at Aldi/Lidl or visit the supermarket in the last couple of hours of trading for the reduced short dated stuff, which if it's whole veg (not pre-prepared, pre-sliced) will easily last another few days, or even weeks in the case of root veg - co-op in particular seem to be very good at marking stuff down but YMMV, of course
For meat buy short dated stuff and freeze until needed, or buy large and use for successive meals, or buy cheaper cuts of meat - pork hocks/shanks are very good value, for example.
Pasta dishes such as spaghetti carbonara could also be made from scratch at very little expense.
And you can always bulk dishes such as stews out with cheap nutritious fillers such as chick peas, lentils, split peas etc
Oh and be prepared to shop around rather than sticking to one supermarket. Aldi/Lidl can be very cheap for veg and deli items, Morrisons are good for meat (range and price), Farmfoods are pretty good for frozen fish, and so on ...

ever since i went to uni this was something i always aimed to try and do. get a good sized meal down to £1/portion. Rice (the larger the quantity u buy, the cheaper) + lentils makes for one of the cheapest, complete protein meals you could have. you could add in chick peas, and change the spices for variety.
other then that, one of the cheapest things i would make, would be a jacket potato + baked beans & tuna + grated cheese. would fill me up for the entire day!

Slight twist to this, but it always amazed me when I was in halls at uni that we got three very good meals a day, plus coffee, biscuits and odds and sods for around a £2.50/head/day budget. I know prices for catering packs are obviously different, but as the meals were varied, tasty and plentiful I was always impressed.

Asda own brand noodles are 6-7p a packet.
edit - be careful with salt levels with these cheap noodles!
