I used a Delia recipe the last time I cooked pheasant. It was delicious!

I've got 2 currently hanging in the shed waiting for me to get round to plucking them.
I usually just roast them breast down with sliced and chopped Bramley apples ( as a trivet base and inside them)for 50 mins at 180 deg C. Use the apples after to flavour the gravy.
Only bother to eat the breasts that day
Next day, remove leftover meat from rest of carcasse and either make rissoles with them or (if there's not enough meat) add to a suitable soup to enhance it
Quite often I use the carcasse to make stock and then either use part of it for the soup or freeze the excess stock in ice-cube bags to use later in the year.
