I'm currently renovating an 1880's house

All the normal stuff taking down a few Walls, replacing the windows bathroom kitchen etc. What jobs do I have to inform the council building regs/control people of?

Any internal walls that are load bearing and are to be removed will require notification - possibly with Structural Engineers calcs to confirm lintels/beams etc are appropriate.

Replacement windows are required to meet certain thermal performance requirements and also require notification.

The kitchen works may or may not depending on the extent of any alterations to the drainage.

Are you in a conservation area or is the house listed?

Not just loadbearing: removal of non-loadbearing walls can potentially fall within the scope of building regulations, too, since they can affect fire safety (and although probably not applicable here, it's not always obvious to the layman what's loadbearing and what isn't - we regularly used structural stud partitions for butressing purposes, for example).

Full list of alterations requiring B.Regs is here. Also anything that creates new habitable space (eg. loft or cellar conversion) can require approval.

If in doubt, speak to your local Building Control department - they're usually a pretty friendly, knowledgeable and helpful bunch.
