Hi

I've got some lamb fillets and said that I'd cook a meal for my missus. The snag is my culinary skills are somewhat lacking (managed to boil a stew dry once in the oven!).

Just wondering if anyone knows of any simple but tasty recipes (she's not into currys).

Shoulder fillets and for tomorrow (Sunday). I've got all day to prepare in necessary.

Not as complex as it sounds and leave out the spinach layers and it's pretty simple really. Even if it goes a bit wrong you will end up with some serious brownie points for trying wink

I think shoulder fillet is the same as neck fillet.

I would use it for a morrocan tagine. failing that you could chop it up finely and make into koftas or posh lamb burgers.

How about Italian style with sun dried tomatoes and mozzarella? I've made this before, it's dead easy and tastes gorgeous..

Serve with couscous mixed with a little tomato paste and some roasted peppers, courgette, red onion, olives etc thrown in. Looks far more impressive than it actually is.

Thanks for the replies!

In the end I made lamb and rosemary wrapped in prosciutto ham with a Cream Dijon Sauce!

Gained some brownie points!

I seasoned the Lamb in Rosemary and olive oil for 3 hours.
Then quickly pan fried the lamb in olive oil, rosemary, cracked black pepper and cracked sea salt.
Wrapped the lamb in proscuitto and then oven cooked for 15 minutes at 100C

To make the sauce I used 200ml of chicken stock brought to the boil. Two teaspoons of Dijon Mustard, a splash of white wine and some grated/chopped golden delicious apple. This was combined but not allowed to boil. I then used a 1/3rd of a tub of single cream and allowed to just boil.

When adding the mustard, taste after each teaspoon has been mixed in ringer the flavour just right!

I loved the sauce but our mass thought it had a bit of a mustardy kick to it!
