My recipe for a tomato/garlic based sauce that can form the base of lots of deliciousness goes something like this:
Get some pancetta, cube it and fry gently until starting to crisp
Finely chop an onion and a crushed clove of garlic, add to the pan, season (easy on the salt, the pancetta brings its own) and soften, being careful not to brown too much
A splash of red wine at this point doesn't hurt
Optional: add half a grated carrot
Add 250ml stock and bring to the boil, then simmer for 5-10 mins until starting to reduce
Add tomato puree, a teaspoon of smooth dijon mustard, oregano and thyme to taste
Add a tin of chopped tomatoes
Taste and adjust seasoning if required (probably not, tbh)
Bung in a couple of bay leaves and simmer for yonks, longer is better.
