What would you do here?

Say if you had a job offer that you had to accept by the start of next week verbally, but had another potentially fantastic offer waiting for you that you wouldn't hear about until the middle of the week, what would you do? If you were in a small industry that potentially you don't want to burn bridges with?

been there. accepted the 1st job, then the 2nd came up and i was offered it.

i wrote to the 1st lot explaining that the 2nd one was full time and more money etc hope they could understand. they did

Verbally agree, subject to contract.

Spend ages getting contract "checked" until other job is decided.

Reject contract and accept other job. "Sorry, I want 50 holidays per year"

Be very unpopular with old company.

Verbally agree. if 2nd job comes up be frank and truthful to 1st employer. They should respect you for it and be glad for you if they are decent people.
