Anybody got a recommendation for a kitchen syringe large enough to inject something fairly thick like melted Brie into chicken?

Seriously, try a vet. A medical syringe is too small for that sort of thing. Normal approach is a piping bag with a fine nozzle.

Or something similar. I used one to inject brine close to the bone for bone-in ham.

A "Bladder syringe" is your friend - and a paring knife to make a small incision to get the nozzle in....

I've got that one from the Richmond Cook shop - it's very good, I use it for Smoked pork shoulders and it works a treat.
