After about an hours drive home last night, I parked the car (cerb 4.5) for 5 mins while I got some food. When I wen to start it, the starter motor didn't turn over (the warning lights dimmed, showing the current was being drawn, and the was a click as I pressed the starter button).

I left it for about 45 mins, and tried again, and it started first time.

It's not done it since, but what could cause the starter to stop working like that? Heat related?

Sticky solenoid. Heat or bad connection related.

Very common to need a replacement starter.
Look at old threads for cheaper ways of fixing eg getting a recond one.

sounds very much like the starter motor is on the way out. Mine did this for a few months or so before finally giving up the ghost

Just need to carry a hammer in the car with you until you get it replaced. When it sticks just give it a sharp tap with the hammer and that should get things working.
