.....does anyone here change their oil in-between services?

Just checked mine recently - 6 months & 7,000 miles after the last service - it's not black but it's not translucent like it would be just after a service - but somewhere in between (i.e. a bit murky). Would this encourage anyone to change their oil before the next service is due?

(NB: - at the last service, car was approx 3 years old & had only done 7,500 miles. I've not gone mad with it, no track days etc but it has been driven reasonably hard on occasions.)

I wouldn't change it based on colour.
You'll find it will only take a few hundred miles for the syrup coloured new oil to start to go black anyway.

I assume its an NC, tbh if its unmodified and not doing track days, I'd just change it at the service interval.

i drop mine wvery 3-4k miles and its a pain!

Apart from the occasional top up the oil in my Mk1 is remarkably new looking considering its 9 month age...
