As above, thoughts on how to cook them? Their loins if that makes a difference (skinless).

Batter and deep fried, you know the rest.

Can't imagine wanting to do anything else with them.

Pan fried, on top of a potato rosti, topped with wild mushrooms fried in butter. Parsley and a squeeze of lemon over.

The 'earthiness' of the potato and the 'savouriness' of the mushrooms really bring out the flavour of the fish.

Wrap in slices of Parma Ham coated with pureed sundried tomatoes and bake.

yeah you do- take your deepest pasta pan (or similar cookware)

Heat until it gets to 200degrees (a sugar themometer is handy), then fry away.

Turn off pan, leave to cool and decant oil back into bottle.

Assuming it's loin. Get a couple of handfulls of grated mixed white cheese (parmesan, cheddar, provolone etc..). 1 small handful breadcrumbs, tablespoon of grainy french mustard, tablespoon chopped fresh parsley and 2 tablespoons fresh lemon juice. Mix together in bowl. Push cheese mixture onto top of cod covering whole length of fish, about 1/4 in thick. Bake in oven at 350 for 20 minutes. Serve on top of mixed leaf salad with olive oil / balsamic / white wine vinegar / whatever you fancy dressing. Accompany with good NZ Sauvingon Blanc. Delicious.
