Blurb are going to be doing iPhone/iPad 'books' later this year - might be all you need. Or not.

If you find out any more on the app front, keep me in the loop if you would - I've been looking for a while, but not found a way forward yet, without spending silly money. (I'm kinda waiting for Blurb).
