It's unclear if this is on the 2024 or the 2025 - he rode both versions. The articles I've found lean either way but I have a feeling it's the 2025 as an empty track will reward the improvements to the chassis rather than the reduction in power and especially on a tight track like Aspar.

I think the idea is to give greater differentiation between the models. Look at stuff like the 44 teeth review of V2 and V4 pani's in Italy last year - both bikes doing a kind of similar thing and they preferred the V2 on the road given easier power delivery.
However, these are both models with quite extreme riding positions for most middle aged road riders (being honest) - so why not leave the top bike for those that want all the bells and whistles and come up with something that looks like a sportsbike but that is more accessible to a wider range of punters at the price point - with lets be honest, enough road power for most people.
if you need / want more - just buy the big daddy.
Also the V2 was overpowered for supersport and I think quite meaningfully restricted to keep within the rules vs 600cc inline 4's - this also gives Ducati a more approrpriate platform and no doubt the lighter weight of the base is quite helpful in adding peformance without cost for privateer teams vs the old model.

Think it's a great idea. Any move away from the desmo engines is going to be a good thing for the owners who actually put miles in on them. That major engine service is such a massive bill constantly hanging over owners most sell on before they have to do it, then the second or third owner has to consider an immediate fat bill on a used bike, making the second hand prices problematic too.
That's assuming you are lucky enough to live near a dealer.
I think the bike market as a whole needs a real reset towards what people are actually wanting and buying much in the way the Honda Hornet has done. I think Ducati are being very smart with this, they openly acknowledge the updated Hypermotard is aimed at younger riders, but that the pricing is wrong to actually get younger people onti/into Ducatis.

It's a pity the engine isn't 10% stronger, 135 would've been spot on but I'm sure I'll cope with the 120+
