sorry no i'm wrong. don't serve wagyu. serve meat from retired british dairy cows. the meat is 3x cheaper. but you could charge the same by telling everyone how it's better for the environment, the cow isn't just going to waste to be animal feed, plus it's newer, more hipster (i'm sure hipster isnt even cool anymore) and more niche.
Ah, I'm seeing where this is going - since wagyu is trendy, you now serve normal cow and charge lots because that is retro thus will appeal to hipsters.

...and, of course, there are so many H-vans and other retro food trucks, that the new cool will be to serve food from a building.

Yes, self discipline is the hardest thing to manage in that game. It was for me anyway.
Someone I used to work with did this fairly regularly, he used to make a nice bonus income, £1000-1200 most months.

I trialled it briefly, only £50-60 just to see how it worked. It baffled me so didn’t bother again hehe
