Burger toppings
Discussion
Aside from the bun (which must be toasted) and the burger (which must be medium) I normally go with a squirt of mayo, french's mustard and ketchup, red onion, shredded salad, slice of beef tomato, emmental slices, crispy smoked streaky bacon and a couple of pickled jalapenos.
What do you do that works well
(making burgers tonight and looking for inspiration)

Cheese has to be melted. Close the lid on the BBQ, or a metal bowl on top if its in a frying pan. No red onion for me. Sauce wise, something a little sweet/spicy, but not much. smoked streaky bacon (only time I eat it).
There is a tiny place near my flat that does great burgers, and they serve them under a glass bowl with smoke pumped in. Taking the bowl of to great fanfare. Sounds like a gimmick, but it gave the bun a really nice smokey scent/flavour.

Melt cheese on top, place another burger on top, melt cheese on top of that, add three rashers of streaky bacon on top of that and, finally, top with mushrooms fried in garlic. Add whichever sauce you like for taste, I prefer dunking my burger in sauce before each bite as opposed to saucing inside the bun.

Lose the Mayo.
Make sure the cheese melts
Maybe replace the ketchup and jalapenos with Stokes chipotle ketchup - or lose the jalapenos and just go for straight Stokes tomato ketchup.
Other than that, there's nothing to be gained from messing with a burger.
Almost forgot - add 3 or 4 slices from one of Mrs Elswood's Haimisha Cucumbers. Only ever use the whole ones otherwise they end up way too pickley.Make sure the cheese melts

I've been buying these Monteray Jack with jalapeno's, burger cheese slice things from Aldi; one on the top and one on the bottom, melted under the grille, topped off with Heinz onion relish and a slice of bacon, in a brioche bun.
Just picked up some of the smoked "German" cheese with jalapenos for tonight On the general subject of burgers if anyone is not familiar with Tony Singhs curried burger you really need to try it.
Also, lamb burger topped with a feta cheese, mint and yoghurt with humus and a crispy salad leaf underneath.
I keep mine like yours pretty traditional.
Sliced raw tomato and onion, lettuce, melted cheese (any variety really including American), ketchup, frenches mustard, mayo, pickles either in or on the side.
If I'm feeling decadent I'll also add any combination of fried onions, fried mushrooms, fried egg.

I'm a man of simple tastes. I get that people like all sorts of relishes, but I loathe mayo and ketchup, the smell/taste of both makes me want to
I hate the fact that all the big chains, and pretty much every place you order a burger in, insists on putting this st on them by default.
Why not leave it for the consumer to decide.
Fortunately McDonalds have gone for the 'Customise' option on their touch screen navigation and with table service one is not left stood around like a lemon whilst they make you one nice and fresh without all the ste on it.
