Lazy me has been using Pataks Madras Paste to make curry at home, However it seems to have been out of stock in Sainsbury's for months (not going to visit another shop as I get delivery) so I had a look online to see if I could get it elsewhere. I found on Amazon this Knorr Patak's Professional Madras Paste, 1.1kg It even has the Pataks logo on the jar.

£ 7.91 for 1.1kg or £2.30 for 283 grams

Been using their tandoori paste for ages. This must be the third jar.

I suspect its exactly the same as the retail product but it tastes stronger. I use a dessert spoon for 4 boned chicken legs and marinate for 24 hours, then yoghurt and another 12 hours.

I realise that you can probably get catering sizes of things, but I have never seen it before. I wondering if due to everything shut down they decided to sell direct to individual customers.

They've have their marinades, pastes and ready to use sauces in catering sizes for ages. All pretty good for what they.

I think the deal with Knorr is more recent but certainly been around for a year or so.

Only issue is it does make quite a lot of curry so you have to really like it!

It says once opened it keeps for six months. I eat a lot of curry so think I would knock down a jar that size in half that.

Patak's kebab paste was superb, but it morphed into Madras Kebab paste and could only be bought in catering sized tubs. Wing Yip usually have it.

I never use pre-prepped curry pastes or sauces, as to me these taste 'stale'.

It really is a piece of piss to make your own, and it has so much more flavour, especially if you use whole spices and grind these fresh.

Madras paste (makes two curries for four):

2 tbs coriander
1 tsp black pepper
2 tsp hot chilli powder
1 tsp garam masala
1 tsp turmeric
1 tbs cumin
2 cloves garlic, crushed
2 tbs vinegar
1 tbs vegetable oil
5 tbs water

Heat the above in a pan and simmer until reduced. Store in a jar in the fridge for up to two weeks.

I have that book, the recipe is on page 8. I don't always want to cook from scratch, sometime I don't have time or I am just too tired, especially when I am just cooking for one. Sometimes I cook a curry from scratch sometimes I will use a shop bought paste, I just have a bit of a balance about what I make and when I buy a jar or packet.

I assume you have used it before. I hope so before buying two 1.1kg jars.

Professional is subjective... I bet a hell of a lot of pubs do just to avoid the cost of a 3663 boil in the bag massala.
