Decided to do something a little special with the duck I shot on Saturday. Duck breast, confit leg, duck neck sausage with parsnip & vanilla puree and parsnip crisps.

Impressive.
Respect for using the whole bird. Plucking is a massive messy faff.

Confess I tend to breast out the duck I shoot. You might inspire me to be less lazy!

As you say plucking is an almighty faff. But have a real addiction for confit leg, so usually do pluck them all. It's the 1st time I've done the sausage but definitely something I'd do again. Also really enjoy the hearts pan fried, but my wife hates them hence why they didn't make it on to this plate.

I've only recently joined this site and I have to say this thread is inspiring. The standard of cooking is outstanding (especially Pferdestarke)

It's really motivated me to try cooking so I doff my cap to you all.

First attempt- sort of bangers no mash. It's crushed carrot and swede with red wine and beef stock reduction with onions. Rubbish by the standards here but very tasty

Desert - please don't judge me!!

Next time I want some attention on this thread I'm buying a packet of crisps rather than spending three hours slaving over a hot cooker.

Bloody ungrateful, easily pleased, troglodites, the lot of you, it's back to the photo of your lunch thread for me, they know what's good for them. tongue out

Adenauer I do apologise. This is a photo of your dinner thread after all. So I recognised it's about using your ingredients wisely. With this in mind have a photo of my dinner from earlier this week

That looks lovely, what paste did you use? I've found them a bit hit and miss. Homemade ones are great but sometimes the ease of a ready bought one is what a mid week dinner needs!
