Yes it is possible to get 1 day insurance (Aviva seem to be one of the main providers) and it would then be legal to drive it to and from a pre-booked MOT with no tax.

Getting insurance is not dependent on a vehicle having tax, and she doesn't need tax to drive to and from a pre booked mOT, so yes, she can get insurance without taking it off sorn.
I did this for my currently SORNed Westfield. I'll do it again next year I expect. It gives me a legitimate opportunity to drive it on the road once a year and, of course, gets me an MoT for it should I want to tax it quickly. Get a local garage to collect it, don't get ripped off and save on the insurance cost. Sounds like a win win tbh.
