As a counterpoint I have always struggled to parse (not sure that's the right word) where bosses's limbs are. I watch videos of people fighting bosses up close and it's like a ballet, every move seems to be precise and they never seem to get hit, despite the fact it often looks like the boss's limbs clearly hit the character, etc. I try and get up close and personal and it's like 8/10 of the time I'm getting hit by the attack and when I don't it feels more like fluke with timing than skill.
You initially just do a mixture of panic rolling or if all is going well, try and work out the right moment to roll. During your roll you have some invincibility frames and you want to time the i-frames with the moment the enemy would have hit you. With the more complex enemy attacks that often can be longer in their duration, you need to time the first roll and the subsequent ones close to perfect to survive. Initially it seems like a particular attack is impossible to dodge, that happened a lot for me and Malenia in both phase 1 and 2 but then eventually you work it out. To me that is the challenge and the sense of satisfaction. It's just like any puzzle. Can seem impossible to you put enough time into it and then it can potentially seem easy.

There is a boss in Bloodborne that I have not beaten, even though I have been through the game multiple times. It is so late game that when I arrive there I am worn out and can't find the desire for a hundred attempts necessary to maybe beat it (Orphan of Kos), but then I saw a video where a guy beat the Orphan without having ever even rolled/dodged. Instead just calmly walked around each attack. Mind blowing the effort required to learn the attacks that well.

This is perfect. It means as you run back to the spot your massive collection of well earned (but unspent) runes are in you NEED to not be complacent. And when you are complacent and lose them all you can bathe in self loathing. Been there so many timessmile. In bloodborne if die and drop u your runes (blood echoes) in a fight with an enemy, they don't always await your return on the ground, instead an enemy picks them up and you must kill they enemy to get them all back. Their eyes glow to indicate they are holding your dropped runes. Can make that fight very very nervy smile.

I must be mental. I have also started playing From Software's Sekiro - Shadows Die Twice. Stuck with nowhere to go/reach but that's for another time to find where to go.

Back to Elden Ring while I work it out.

Currently trying to get to Nokron via the big hole and I hate jumpy things.

Done it, more jumpy bits, horrible frog men (are they the worst/irritating enemy in the game?) and now I'm here.

Up to level 35 with my restart build from scratch character. Focusing on dex and strength. Having a great time with the hookclaws. Got the Claymore for enemies that aren’t affected by bleed. The special attack on it is really fun.

Found a shield that does bleed damage in some ruins as well.

I figure I might get dex and strength up to 30 and put some points into arcane as that buffs bleed?

Don't think so, there were a few people to talk to on the lower floor first I seem to remember. Sure you're at Ranni's Rise and not Renna's Rise which is literally right next door?

Might need to go and find Blaidd, he could be at Redmane castle for the Radahn fight, or you might need to go find him howling at the moon where he first appears.

Yes this is correct, you need to do first bit of Blaidd quest before Rannis rise.

Don't be afraid to use a guide to give you a hint on where to go. This is the one side quest you shouldn't miss.

It took me 4/5 goes to realise you need to get behind the makeshift barriers. Then start to summon the NPCs and once you have a few of them make your way up the hill to fight him.

It's a relatively easy fight once you get the strategy down.
