It's basically what the Android head units are, after all.There's plenty of bluetooth reversing cameras on eBay/Amazon etc - they're popular on motorhomes - mostly with dedicated screens. Connecting them to the tablet shouldn't be hard, because they're not going to be particularly specialist chipsets.
I've got a Nexus 7 android headunit instead of the oem satnav in my dash and wired up a simple relay that senses when the cars in reverse (tapped into the reverse light circuit) then triggers the usb camera.
I use Timurs kernel which has built in usb camera auto mount so you can use a webcam or an rca to usb video converter then it switches over to the camera (I take the video out from my rear dashcam) and then displays onto the android tablet, when finished it automatically goes back to whatever was on the screen when I disengage reverse.
