I removed the walnut interior from my last evo. Its not that cheap to do, as the pad in the dash is about £40.
The Console is over £100 from bmw, ashtrays cheap enough, door handles (i got from scrap year) never sit quite right, as the original wood ones have been there for ever.
Gear knob £35 - £50, then £10 - £20 for the hand brake cover.
I did it as it made the car look more modern, as I think the wood looks ut of plcae, but some people bought the old wood on ebay, so who knows.
