Your opinions please - Pepsi GMT vs Omega Speedmaster

I'm keen to get some answers to the below, informed opinions and maybe some considerations I have not thought of regarding the following - thanks!
1: I wish to get either a 1974 Omega Speedmaster or a 'Pepsi' GMT (ideally 1974, but am finding one harder to locate). So, questions are as follows:
> Which is the 'right' Speedie to get? You know, the correct calibre movement, crystal, should it be manual if it is the 'proper' moonwatch etc?
> Anywhere I should be looking in particular (online and physically), I will be back in the UK in June and will visit Burlington Arcade - there is a vintage Omega (Somla?), but is everything in the Arcade overpriced?
> General opinions on 'Pepsi' GMTs please? Could I get any GMT and then a red and blue bezel insert direct from Rolex? Do you informed people think there will be (maybe there is already!) a ceramic red and blue bezel?
> Is Dominic H my man in this situation?
2: I have a new, boxed 16600 SD tucked away for my son when he turns 18 or 21. What would/do you guys do in this situation? Wear the item, to pass on something with history and stories behind it, that maybe more sentimental to him in the long run or pass on something new/mint that he can always move on if he needed to (he will have other used watches passed down to him)?

Yeah, that second question was a bit loaded - I'm aching to wear that watch - but just needed some prompting it was the right thing to do!
Thanks for the info re the correct moonwatch - I know there are Websites out there that diligently go through every variant, movement, limited edition etc, but knew you lot on here would know quickly and accurately what the 'right' one is.
