If you want serious heat for searing steaks etc you can remove that frame altogether and the grill will sit on the rim of the fire bowl.

I wouldn't trust the dome thermometer for controlled temp cooks as on mine it reads around 10c lower than actual grill temp, I use a temp probe to measure grill temp.

Don't forget to "burp" it when opening the lid if you value your arm hair, especially at higher temps laugh

Lots out their to choose from, personally I have a couple of Inkbird bluetooth units, a 2 probe and 4 probe. They link to an app on your phone which is quite intuitive and the range is pretty good. Very accurate too. Customer service is meant to be really good as well although not had a reason to use it yet and there is an FB support group, they quite often post discount codes in there.

Just cracked my ceramic heat deflector on this. Seen a few Google hits for Facebook people selling steel discs as a replacement, but 50-70quid strikes me as a bit steep! I'm all for a bloke making some cash but bit much AIUI!

If I found a machine shop how much should a 25cm (or so) cm thick disk set me back?

It’s probably not that straight forward. You should probably use 316 stainless steel and will probably need to buy a length of it which would be more than that. I would think you want it laser cut rather than done on a CNC. Either way, £40-£50 an hour is about the going rate and it would cost that for someone to break a machine down and reprogram it for your job. You really need to do this sort of thing in volume rather than a one off.

Anyone replaced the wooden shelf portions on theirs? Mine are starting to look a bit black and manky. I use the cover and store it in the shed in the winter, I don't think it's the best quality wood in the first place...

My deflector cracked a bit ago. Got a piece of mild steel in roughly the right size then cut it to a rough circle shape with a grinder. Does the job fine.

To cook pizzas on the Aldi Kamado, do you need a pizza stone?
Would there be any advantage over a pizza stone in my Webber One Touch?

I don‘t know about the Aldi one specifically, but a kamado generally will be able to get up to a much higher temperature than a a Weber, which is what you want for cooking pizza.

I don‘t know about the Aldi one specifically, but a kamado generally will be able to get up to a much higher temperature than a a Weber, which is what you want for cooking pizza.
This is pretty much it, you can get them super hot and keep them there. Felt gasket doesn't tend to last that long cooking at those temps regularly though.

Do these things give out much smoke. I would like one at my holiday place on the terrace but don’t want to annoy the neighbours

If just cooking with charcoal then no, mainly on first lighting but once going they're fine.

If using wood to smoke then obviously there will be some but if you're doing it correctly it should only be thin wisps of clean blue smoke anyway (same with any smoker really).

How well do these survive being left outside. Like the idea of these and I'm looking to replace my old trusty kettle BBQ - rust has taken to the legs (think it's over 10 years old) and late summer I dropped the lid, breaking the handle (which does not gaffer tape well hence looking at a replacement). Was surprised then just how much BBQs had become and was toying with a smoker (again though, the cost). Even at this price it's still a lot for what I want to spend, but the reviews seem to indicate they are worth it.

Additionally I don't see any dimensions. How wide/large is the cooking area on these, I asume by the shape of the lid there's more space there than on a traditional kettle BBQ.
