I'm not so sure. He's served his rice with one of those ice cream scoops as wielded by those scary dinner ladies at school. That can't be good for anyone's mental wellbeing.

Best my cat has managed is a partially digested rat leg (it left the remainder of the rat in the middle of my neighbours terrace).

Dinner last night: whipped fresh cheese with herbs and dips; scallops with bacon and red chilli pesto; skate wings with black butter and capers; raspberry pannacotta with lemon profiteroles, stu-uffed

Super simple…

Cut the potato in half and stick it in the oven at 200*c for 30-40 mins (until it’s soft enough to stick a fork in with out feeling hard). Then scoop the flesh out of the skin in to a bowl, add salt, pepper and a chopped spring onion. Stir with a fork… if it’s a bit dry add some butter.

I'm trying to "get" spring onion with sweet potato. I would have used fried shallots. I will have to try spring onion and see.

Spring onions are marked as "onion leeks" here in the Phils. Only one deli, Santis, and S&R mark them up correctly. This has been ongoing for two decades now rolleyes

Spring onions add a bitterness to balance the natural sweetness of the potato.

I’m not looking for a smooth, creamy mash like you’d do with ‘regular’ potato’s (hence roasting rather than boiling). I like it firmer with a savoury taste.
