Not so much dinner, more of a snack. Squirrel, pan seared, covered in nut oil, lightly salted and peppered wrapped in foil then 15 minutes in a 180° oven. Very tasty.

I think we'll all be doing this shortly. Recipe please. Start at the beginning - how do you catch the little buggers?

I hunt regularly, going to shoot them anyway as they are pests, may aswell get a tasty snack out of them. Don't knock it till you've tried it, not dissimilar to KFC chicken IMO.

Only tried squirrel once, nice but fiddly!

Is there much prep involved? Are they more onerous than a rabbit?

Rabbits and squirrels are straight forward and quick once you get the knack. I use either a small axe or cleaver. Off with tail, head, all 4 paws up to first joint. Sharp knife and make a small incision through the skin in the middle of the back. 1 finger from each hand in the cut and pull apart. Will strip off one half of the skin, then pull off the other half. Them just open it up and remove guts and give it a rinse off. Under 5 minutes work once you know what your doing.

Rabbits are actually the easier of the 2 as there is more to grab hold of and the skin isnt as attached to the animal as it Is on a squirrel.

Cheers, I'm ok with rabbits, as you say there is a bit more to grab.

Can you taste the difference in older/younger squirrels? Assume you don't hang them?

I don't tend to hang any of my quarry very long, couple of days max but fresher the better for me.

As with most animals younger is more tender. Rabbits especially in my experience. Clearly you can adjust cooking methods to allow for that though. I tend to cook alot of meat quite simply as I want to taste the natural flavour of the meat itself.

I used to shoot squirrel virtually daily but I've never eaten one. The dog saw it as her treat rather than mine. What you've done looks great.

Brilliant. I do like rabbit so sure I'd enjoy this too - my favourite part though is that you used nut oil biggrin

Dinner this evening, pan fried rare pigeon breast cooked in butter. With gently fried red onion still with a little bit of crunch. All atop some nice buttery, peppery mash. Finished with a very creamy peppercorn sauce. Rubbish phone pics dont help it but it was bloody lovely.
