Whatever knifes you choose (and buy them by looking for the characteristics that you would look for in any knife) keep them honed and you will enjoy them all the more.

I got mine from donald russell (you can google for his site) and they are fantastic.
Absolutely agree here. I was after some steak knives and my M-i-L gave me some smart looking Stellar knives. They have a sharply serrated edge which although sharp, will tear at the meat instead of cutting cleanly through.

I'm not too keen on the overly fancy Laguoile knives, although they are very sharp and no doubt effective.

Nope, never needed to at home...and where possible we get inch-plus thick fillet from our local butcher.

It all depends how good the meat is (and how good the cook is)!
