Lockdown date night so had some Mont D’or and duck with roast baby potatoes and veg. I liked the red wine and red currant sauce a little bit too much!

If you want to make your own there are no real shortcuts. Ask your butcher for veal bones, get them cut down. Then roast off and then simmer with mountains of root veg, bay, peppercorns, parsley and thyme. Reduce wine separately and add and just keep reducing. I do this every few months and add in roasting juices from about 100kg of beef and pork which I salvage each month. I might also be tempted go give it a boost with some decent bullion paste.

Normally go with about 10kg of bones, 10kg of veg and 3 litres of wine. End up with 1 litre of stock jelly which I freeze and vac pac. It's literally liquid beef so you can extend with wine, cream, water as necessary.

Forgot to add,,all the way through your are skimming then finally passing a reducing (and skimming again), last pass should be through at least 3 layers of muslin, then skim again and again. The result should look like gloss paint.

Yes it is. We’ve got a couple. Not my favourite knives but they are ones we will keep, they are beautiful and so well made.
They look fabulous. And hard to come by at the moment by the looks of it.

I was tempted to request one as a birthday present but the lead time and covid screwed that idea unfortunately. Maybe next year.

I am and do but covid has seen a temporary end to that. For now I have to guide my crew via MS-Teams... imagine that... me balanced on a sack of flour in the corner giving orders.

Thats where we are heading! I've only been in the kitchen 30 odd days this year, either watching daytime TV or monitoring orders and agency chefs remotely but signed off and banned from site whilst new ovens installed and new staff recruited without my "supervision".

Yep... not happy.

Yes they are. We got ours a few years ago on the Friday 1pm shop. We had to try quite a few times before we got them.



They are a bit of a pain because they are carbon steel so they will rust if you are not careful. So well made though, they really are ‘for life’ items.
