Made a bit of a treat for myself and my wife this evening. Chicken thigh ballotine stuffed with mushroom duxelles, cauliflower purée, roasted baby new potatoes, parsnips, charred baby gem, asparagus, petit pois and Madeira sauce. There's also a random garlic crouton that was supposed to go under the chicken but I forgot.

Cote de bœuf, triple cooked chips, asparagus and roasted tomates. Béarnaise for the wife, peppercorn for me.
Aberdeen Angus, 45 day dry aged, 56 degrees/4 hours sous vide.
