Talking of which, here is me getting my hot dog wrong, fit wise, and trying to get it into the bread. I have ended up with a porky R2D2 in the middle

It was the same batch of dough as I used for the flatbreads so 60% hydration with a slow prove. All I did was kneed in about 75ml of olive oil to what was left. From scratch it would have been:300g strong white flour
200ml water
2g yeast
5g salt
I just mix, kneed in the bowl for a couple of minutes then leave covered in the garage over night. Next morning kneed in the bowl again for a bit longer with olive oil, chopped olives and I have some thyme kicking about, stretch out into a tray, cover and prove. Stud with whatever, again I just used what I had, some left over sliced onion, a few thyme leaves and some semi-dried tomatoes I did the other day. Then a bit of parmesan.
Bake at 220 for 20-25 mins with a tray of boiling water in the bottom of the oven.
