Indian style Lamb Kebab, with Cucumber Raita and Salad in Pita Bread
A very simple combination but tastes so good.
Ingredients:
Leg of Lamb, Yoghurt, Lemon Juice, Ginger, Garlic, Cumin seeds, Coriander seeds, Cayene Pepper and Salt.
Method and Cooking:
The marinade could not be simpler - just combine everything in a bowl and add the lamb. For the Cucumber Raita, beat the yoghurt with grated cucumber, chopped mint, roasted cumin, cayenne, salt and black pepper.
Remember to soak the skewers for a couple of hours to prevent charing, thread on the lamb and cook until brown. Lightly toast the pita bread. Spoon kebab, raita and salad into the pita and consume with red wine
The UK may be suffering a heatwave but the east coast of Aus is unusually cold and wet - not really BBQ weather !

Right, well... BBQ to me means slow smoked pork, so I chose to do a nice piece of pork belly. Not traditional southern Carolina but possibly my favourite cut of pig.
First of all I marinated my meat in garlic, cumin, smoked paprika, salt, pepper and red wine vinegar. I also sliced dried chipotle peppers and stuffed them into the slits I scored in the skin. I left this in the fridge for 18 hours.
Then, at exactly 18 minuted past 11 on Saturday morning I got my meat out and slapped it onto the BBQ. I set the BBQ up for indirect cooking and in a perfect world I'd have soaked the log in vinegar, lager and water to help get the smoke going.
About 8 hours later I took the meat off and finished it under the grill to get the crackling going. It's a lot easier to do it this way as you can control what's going on. I then served it with some home made 'slaw, sauted potatoes and pommes boulangere.
I had quite a lot left, so I shredded it and stuck it in the freezer for pulled pork sammiches later

Surely i win points for involving the kittens?

Persian Chicken Kebabs & Mint and Pomegranate Raita with a basic salad of red pepper,spinach, mint, and spring onions
Once again forgot to take some ingredient pictures or indeed progress!
But..
Need to buy a new camera rather than using a ropey old Iphone!

Recipe!
4 chicken breasts (marinated with 1 tbsp Garlic, juice & zest of 2 lemons, 2tsp Smoked Parprika, 2tsp oregano, and obviously salt & pepper) ... marinate for 2-3 hours
Mint & Pomegranate raita - Tub of natural yoghurt, water it down a touch, salt, and then blitz up a cucumber, whack that in, then stir though some mint chutney (made up of 1 bunch mint, 1/2 bunch coriander, 2 tbsp yoghurt, 3 green chillis), knock out the seeds out a couple of pomegranates and mix it all together.
Salad - chop and mix!
chicken back on the Weber, stick some soaked hickory chips on, lid on, medium heat direct cook for 6-8 minutes.
For everything else theres M&S

My first time to enter. I like cooking especially outside. But my brother was using the Webber BBQ so Mum suggested I make a pit instead.
These were my Ingredients
This Is the pit I dug. I lined it with rocks and collected lots of wood & logs which burnt down on top of the rocks til they were glowing then I put the food in wrapped in foil and then covered the earth back in. I have photos of all of this too
After a few hours I uncovered the earth to dig up my dinner
the chicken was marinaded in honey, ginger and soy sauce
These were my Ingredients

Hi Elias, your pit and finished dish look very impressive indeed! I'm sure everyone would love to see your other pictures of the pit (I might steal your idea actually as it sounds great). These were my Ingredients

This is my entry I wanted to cook something fun and that I could share with my friends. I like building fires and toasting marshmallows
Ingredients
Theres always lots of wood at the bottom of my garden to collect for fire
My friends next door came round too there were 6 children toasting marshmallows. I made the dip by boiling single cream and adding chocolate until it melted
