OK, I didn't bother trying the runny egg thing but did make a few scotch eggs after this thread.

So far best is some decent pork and sage sausages with the skins removed, take a small amount of streaky bacon and chop it really fine with some chilli flakes (I used an electric chopper. Mix this with the sausage meat and cook as usual.

They are not that difficult to make.

1 boil a big egg for three minutes
2 plunge egg in cold water
3 Make your sausage meat mix
4 gently roll it around said egg as per a normal scotch just a bit more carefully
5 Do the bread crumb bit and make the layer a bit thicker than normal ( makes for a nice crunch)
6 Deep free in very hot oil- This is the key.
7 Eat quickly or chill them.
8 If you can't be ars*d go to the Royal Oak in Yattendon, they sell them as bar snacks for £2.50 and they are ace.
