Why do that if you shop at well hung meat,there meat still has a pulse.

Any tips, post them up. I'm sure there are enough PHers locally to go for a 'group buy'.

nothing beats freshly killed game, just cooked a wild duck a mate shot for us. Im a veggie but I still appreciate all quality food. Im fanatical about ingredients and I am constantly poring over one of my 700 cookery books, I plan meals weeks ahead especially when friends stay over, love cooking.

Your point is?

I've used WHM and found it good quality. I merely suggested it for Cotty who is time restricted with his shopping.

MC, that's what I was thinking re: group buys.

Ideally we could find a master butcher who'd entertain a bulk order but I'm not sure if there are many left.

We get a meat box from a local butcher, some vacuum packed, some not
The stuff that has been vacuum packed seems to be just as good if not better, why the negative vibes?

When you work in a busy kitchen with a call order menu and minimum orders on your deliveries, vacuum packing is a god send smile

frown I wish I liked game- not my cup of tea really.
I bought the husband a 'gamekeepers meat box' for Xmas, don't think I can stomach much more of it, the last dinner (partridge) had so many shots in it I think I was getting a shot a mouthful- put me off in a big way

However the pigeon breasts were absolutely gorgeous lick

luckily our mate had managed to keep shot to a minimum on the bird. expecting a haunch of venison soon.

If you come across another partridge.

Get some turkey mince, add curry spices, wrap it around a quails egg and stuff it inside the partridge.

Roast the lot.

Had it in an Indian restaurant in London, utterly glorious.

That does sound lovely, was the partridge meat tough- or did I just get a bad one?

It shouldn't be, it should be soft, not quite as tender as chicken but not far off.

Vacuum packing ruins pork joints, particularly belly pork. It's almost impossible to dry out the skin to get good crackling afterwards.

I work in a restaurant where the food is sourced daily,they have no table menu.the meals are made up and chalked on the board according to availability of fresh produce. Menu changes depending on availability, its an exspensive restauraunt but the cost is reflected in the quality of the produce.

i would be a catastrophically st chef. I cook what i want to eat. if it doesnt work, i learn from it.

if i was a chef, i would owe more tha RBS owes the Government hehe
