Japanese whisky is also gaining popularity in Oz.
Starward are one of the more balanced ones, they're a bit unusual in that they're much bigger than most distilleries there, and so likely have less of a cashflow issue. They've moved a few times as they expand, I visited them a little before covid hit and enjoyed it.
(It doesn't mean the others are bad at all, just as a general rule you need to like the heavy oak influence on the whisky. One of the benefits they have is access to a lot of fresh wine barrels, rather than it taking a bit longer to get to Scotland.)

Here's my recent bash at an infinity bottle as such...a bit of a misnomer as the plan is to lob it into my hip flask for whisky/cigar walks up the Itchen Navigation to Winchester in the coming weeks...just hope they've repaired the various towpath breaches seen back in the summer...
Anyway I used some of a gifted litre of Bells 8 y/o for this and have beefed it up over the last couple of months with a dram or 2 of those seen here:
Kilchoman 12 y/o (cask 40) bought on a whim at the distillery after perhaps too many samples of Machir Bay.
Whisky Broker/Bruichladdich 11 y/o...this was fantastic stuff that sold out in under a minute online IIRC and I immediately regretted not buying another.
Aberlour A'Bunadh (Batch 51) my last relic from when this was affordable as a drinker, reduced to £32 in Waitrose I grabbed 3 of them on the spot...no such bargains to be had now!

I am a complete whiskey novice, Ive had a few in a bar and one or two bottles but very boring starter whiskeys since I was gifted a Haig Club. Im a big fan of flavoured gins and liqueurs, with a sweet/fruity palate, so my first bottle purchase was the Haig Club orange. Wasnt expecting much, but found it very syrupy with little hint of citrus. Not sure if this is just a trait of whiskey in general, or if you can get much smoother ones that are a solid neat drink.
Wanting to start diversifying but Im a long way from you guys, so just purchased the Jura winter edition for £25. Hoping that the sherry casks impart flavour into the spirit.
Not expecting to be spending more than £30 a bottle any time soon but quite excited to start this journey and explore the different flavours and profiles.

One option could be something with a port cask influence too. In general you'll generally have citrus flavours in whisky at your price range as bourbon wood is cheaper. In general Haig Club has a bad rep with whisky geeks, so there are other options but not too sure of what might be best, as I tend to go for the opposite flavour profile - big tastes with different stuff going on! I think these are quite good for the price and come in a little over your budget for example:

Glenallachie is proving annoyingly popular, the new 21 batch 2 was ballot only, yet magically time travelled to auctions that started before release date. Batch 7 of the 10 cask strength has appeared at one retailer as a ballot entry, and sold out instantly this morning at Still Spirit. I was hoping this batch would be more easily available after the flippers of the 6 made zero profit.

The 21yo/30yo are crazy in demand - it's the flip side of most companies where the SCs are in demand - there's too many so it's the standard older core range that is now being chased. I only saw the 21yo appear in one shop, and was still too slow. Almost all shops didn't even bother with putting it online. Ellon whisky shop has the Batch 7. I think it will calm down soon and be more available in general though. I tasted it last year and there was a bit of wine cask noticeable on the finish - it works for me, and is decent values these days IMO!
Springbank is the worst now - everything has just gone insane. Can't imagine the price of the 30yo to come, or how hard it will be to get...

I noticed the daft prices of Springbank, I've even seen the 2020 18yo I bought fetch £270 at auction, that's nuts.

Yea the cask infusions are whats taking my eye. I never expected much from Beckhams whiskey, but it wasnt a horrible introduction - better than being put off for life! That BBR will deffo be my next purchase. For now Im enjoying learning more about the distillations, grains and quality of blends.

Now, before we get into anything else, yes it's a blend, and an expensive blend in todays market too. But boy oh boy it's bloody good.
I went through a bit of a blend whim a couple of years ago. Blends used to be more popular than single malts and you can imagine why-blending with no parameters to get your ideal dram should make more sense.
This one however is by far and away the best blend I've tasted for a long, long time. As said, it may be an expensive blend for some but I think it better to think of it as a £48 bottle and judge it on that.
