I have been watching "Grandpa Kitchen" on youtube of late to try and get some ideas for home made curry.. I know its not "dirty take away" but found some good ideas and will be trying a few of them this year, butter chicken, angry birds biriyani and veg samosas. Not sure I buy into the whole orphan thing and there is a lot of oil used but worth a go!

I came across a Youtube channe afew days ago,l called Ziang's Oriental Food Workshop. A half chinese british lad, with his chinese mum, showing exactly how chinese takeaway food is made, even showing you the exact products the takeaways buy. Their method is by no means the best way or most glamourous way of cooking the dish, but it's rather the exact way it's done in takeaways.
I've afew channels that i follow who are basically chinese takeaway owners showing how to make the food and gotta say that this one is probably the most interesting.

Agreed. I just feel a bit uneasy that someone with 4M followers and average of 20 million views a month is collecting firewood to make the fire to cook the food.. IYSWIM. He (or the production company) must earn at least $100k a year just from views. (probably several times that in reality)

They should be able to buy a fully decked out kitchen by now.

they could. but then the cooking wouldn't be very humble would it? it wouldn't be that interesting IMO.

Yeah, Corona now you mention it. They had an almost luminous green one, probably lime, but was always put off by the colour, Van used to come round every Sat am and always had a load of people 'stocking up' for the week! Happy Days!!

Trying to lose a bit , but it’s friday and this is my once a month takeawaysmile we’ll see ,DIY lamb and chicken curry,with a few chips ,low carb laugh






Add the tub of madras sauce







Dirty stuff .ta ta folks see you in February

On the same theme, Khoan Vong's videos, filmed in his own takeaway in Hull, are good. Taught me how to get Chow Mein spot on. He also has an ebook out, which I bought.

that's one of the other ones i have too, he's very good. though he does all his cooking on a proper burner which many people at home wont have.

that's one of the other ones i have too, he's very good. though he does all his cooking on a proper burner which many people at home wont have.
I’ve got a very heavy pan, but still struggle to stir fry like the big boys do. Those serious burners must cost a fortune to run, but I suppose if you can do your dinner in three and a half minutes it’s not a problem.

I've got a wok burner on the Rangemaster, 3.5kW I believe, does a decent job but not exactly the jet engine he uses!

Fridge broken so no supplies. I had to pop over to Paul's breakfast bar (a trailer) for my usual Saturday morning fix. Breakfast bap (2 eggs, 2 bacon rashers, 2 sausages) £4

My family in rural India have western style fitted kitchens. They still prefer to cook outside when they can .
It seems to taste better but that could be in my head
