There is no doubt that a pork pie is one of the finest food items known to man. I am partial to a good, plain pork pie, with a nice, strong mustard or piccalilli. Of the pork pie variants, my personal favourite is a ploughman's version, containing a layer of cheese and pickle. Although the pie topped with a layer of cheese and baked beans sounded interesting. A pork pie should never be eaten straight from the fridge, it should be allowed to reach room temperature to enhance the flavour. I have tried to make my own pork pies, although the hot water pastry can be a bit tricky. The jelly is important and I have made it using a nice porky stock, gelatine and a small amount of calvados, to give a different bit of flavour.
