First time I had it I was drinking bushwhackers in Pensacola. Same experience, got off the bar stool and ended up on my hands and knees. I was back in Aus for the first time in 6 years to visit family and friends and rum has improved.
We went to Beenleigh distillery which when I was young was considered the 2nd best of 2 rums in Australia. But they've been through a few takeovers and now value quality over volume. The tour was AMAZING and I think any rum head who visits Gold Coast or Brisbane should go - their oldest double retort pot still (running while we were there) was salvaged from a mobile distillery on the good ship Walrus in 1869:
They've got a few dozen 120 year old 20'000 litre casks that they "rest" their white rum in as well which are so cool. The story is that the Inner Circle we bought was the fancy OP rum only available to the Australian Sugar Board members. We tasted all the way up to their $180 bottles but it was a toss up between this or the white rum which was also freaking delicious.
Husk Distillery are nearby (although I didn't make it there). They do fresh cane / agricole style which makes sense as Queensland grows loads of cane still. This one is fabulous if you're into that sort of thing - loads of herby, grassy and a touch of dried apricots. You can buy it in the UK too!
Sunshine and Sons is another fresh cane from further north. Sadly, they've added sugar to it for some reason but I made a daiquiri with it (adjusting for sugar) and it worked really well like that.
Sugar Shed was bought for me by my step mum. Apparently it sells out within minutes when it's released so I'm thankful she went to the effort. I'm pretty sure it's cane syrup dosed (a little) and has been fairly aggressively oaked. It's not bad at all but I'm still trying to form an opinion.
