I'd imagine there are many versions of 'chilli' as there are abuelas in Mexico - each claiming the original.

Try Tesco frozen casserole beef in this, and slow cook it overnight. It's as tough as tractor tyres at £6/Kg, but it really comes into it's own when slow cooked in a Jailhouse Chili.

on the positive side, his other book kenny cooks america is 0.01p +p&p so ordered that...

In standard form how hot is this?

Got to do a chilli for a family gathering at the weekend including kids / non spice fans!

In that case I'd reduce the chillis to a minimum and do some sauce on the side people can add.

I'd say this is medium, maybe medium low but it's so subjective

How hot all depends on how many and what type of chilies you use. My other half has taken to making massive pots of this to keep in the freezer for when she's eating alone. I get in bother if I pinch one. We do it in the pressure cooker. It does a great job in only 40 mins or so.

It is fairly hot if you use properly hot jalapenos. I'd add sour cream or yogurt for the non-spicers rather than water down the chilli content. The heat softens on prolonged cooking.

Hmm it'll be cooked for several hours, then left to cool and warmed through again in the evening.

Sour cream will be a side available for all.

I might cut a couple of the chilli's out though just to be on the safe side.

We've modified the recipe slightly with a few of the chillies cut out and my two year old eats it - he is usually a fussy eater too.

I'd always cook chilli in the oven rather than boil/simmer it - just to make sure the meat is really soft. Anyone else do this? Fry everything first sure then low and slow for a few hours.

When I make a chilli I start it on the hob in a cast iron pot, put it into a low oven for a couple of hours then back onto the hob at the end to thicken the sauce a bit.

I start it on hob then everything goes in the slow cooker for six hours minimum.
