Sausage casserole & dumplings, used butchers sausages. Lucky or unlucky find of Aunt Bessie's stuffing balls in the freezer. Warmed us up a treat after a freezing day on the Welsh mountains.

Moules mariniere. If there's a dish that competes with it for taste/cost/ease of prep I'd love to hear about it! (Gandahar need not apply!)

Went to see my family in Kent on Sunday and had a night at the Hythe Imperial on the way home, we'd already had a huge pub lunch so didn't want a large dinner.

After a very pleasant visit to the champagne bar we went to their Indian restaurant and just had a selection of their fusion food starters, they were absolutely excellent and would recommend if you're in the area.

From the left, soft shell crab, duck, calamari and chicken.

Tonight I did Vietnamese style marinated chicken and salad.

The chicken breasts were marinated with blended shallots, garlic, lemon juice, red chilli, Thai fish sauce, dark soy sauce, brown sugar and olive oil, then grilled later.

The salad was cabbage leaf (I couldn't get Chinese leaf), grated carrot, shredded spring onion, chopped mint, coriander, and rice wine.

Topped with fried chopped peanuts & shallots, and a few slices of spring onion.

I have to say, it was fking lovely and, probably, quite a healthy meal too.
