Just cooked a 2kg piece of Topside in the Le Crusset ...3 hours at 150F.
Was cooked in a large glass of white wine, some herbs de provence and some english mustard, then after the meat had been sliced some cornstarch to thicken. Meat fell apart and is lovely and soft. One of my fave ways to roast a large hunk of cow.
