Start it in a cold pan, skin side down. Fat renders out without cooking the meat so much.
Cold pan, then a low heat for a while to render the fat out, drain it a bit then whack it up high for the last bit. The dogs love to stand beneath the cooker catching the red hot fat as it spits all over the place Mr Roper, you funny guy.
Oh and it says 'Wednesday' on the picture as my missus is recovering from an operation and has been at home recovering for the last 5 weeks, so she's a bit bored and is also going mental.
